Fresh ginger sauce for steaming

Place all ingredients in a food processor, and puree until smooth.


  • 1 and 1/2 cups of soybean paste

  • 4 ounces of fresh garlic

  • 2 ounces of fresh hot chiles

  • 1 bunch of fresh coriander (roots and all )

  • 1/2 cup of fresh lemon juice

  • 1/2 cup of sugar

  • 1/2 cup of fish sauce

  • 1/2 cup of soy sauce

  • 4 ounces of fresh ginger

  • 1/2 cup of water

This recipe makes much more than you will need for one meal, however the size allows the use of a food processor and the sauce will keep for weeks in the refrigerator.
The soybean paste referred to is a thick paste that gives the sauce body. If unavailable simply use a mild hummus to provide the same consistency..
